Black Bean and Salsa
Pita Pocket
This super easy Mexican-inspired pita pocket can be whipped together in less than 5 minutes. Did you know that beans contain many important nutrients and phytochemicals, and when combined with grains, they form a complete protein? A great vegetarian option, this tasty lunch is the perfect combination of fibre, protein, complex carbohydrates and calcium that will surely become one your favourites!
Preparation Time: 5 minutes
Makes: 2 pockets
Ingredients:
½ cup cooked black beans (If using canned beans, rinse well under cold running water)
¼ cup prepared salsa (mild, medium or spicy)
2 tablespoons thawed frozen corn kernels
2 tablespoons shredded cheddar cheese
2 whole wheat pita pockets
Directions:
Combine black beans, salsa and corn kernels. Divide mixture in half and stuff 1/2 into each pita pocket and sprinkle shredded cheese over top of bean.
NOTE: Remaining mixture can be stored in the fridge for up to 2 days. ENJOY!
